《寿司》的编辑、设计和制作从1998年起由来自奥芬巴赫设计学院轮换的学生编辑组负责。
每组人马都致力于使《寿司》日久日新，他们表现得很出色。而每期《寿司》的食客则是设计界的后起之秀们自己以及设计公司中新入行的富有才华的童子军们。每一期杂志就是个试验的工具盒，它只有一个敌人，印刷档期。它也有无数来宾，来自南美洲、美国、瑞典、俄国、日本或中国。以及来自作家、摄影师、插画师、理论家、狗仔队和老狐狸们的供稿。
